Delicious Lemon-Thyme Paleo Bread

You know what sounds pretty good right now?

Bread 🍞

Really good tasting, moist, dense, good-down-to-your-bones bread. The kind you eat still warm with a little shmear of grass-fed butter, ghee, or your favorite nut or seed butter. But the bread also has to have personality. A flavor profile. A little pizzaz. And, it needs to be paleo (for all of us who can’t tolerate grains).

Our Lemon-Thyme Paleo bread is Ah-Mazing.

We’ve packed it full of real food ingredients – almond flour, Vital Farms pasture-raised eggs, California Olive Ranch extra virgin olive oil, and flax seeds, and topped it with Manitoba Harvest hemp hearts. You can flavor your bread with any fresh (or dry) herbs you have in the house. Thyme and rosemary are our favorites for bread. And we love the addition of a floral, citrus note. In this case we went with lemon zest and boosted it with lemon essential oil. You could do this with any citrus fruit and it would be delicious

When it’s baking, your whole house will smell like a bakery. Your mouth will start to water. You think you hear the bread calling your name.

Eat me!

Once it’s out of the oven, you MUST let it cool before slicing into it. It will be hard to resist, but please try. Yes, you can tear off a little piece from the end to get a little preview.

Once you slice it, you can enjoy it plain OR you can top it with your favorite toppings. We’re particularly fond of the seed butters from 88 Acres. As you can see in the picture above, we couldn’t decide which flavor to use, so we went with the pumpkin seed butter topped with hemp hearts for one piece and the maple sunflower seed butter topped with pepitas (green pumpkin seeds) for the other. We couldn’t decide which one we liked better, so we called it a tie.
