Giant Paleo Chocolate Chunk Cookies
Apr 19, 2022You know we love chocolate chip cookies. There’s just something about biting into a warm chocolate chip cookie that makes you feel like a kid again.

This recipe is so simple to make and you probably already have all of the ingredients in your kitchen. When you read the recipe, you might think we forgot to add an ingredient normally found in baked goods – flour. That’s right, there’s no flour in this recipe. No almond flour, no coconut flour, no gluten-free flour. None. Nada. Zilch.
That’s because the almond butter in this recipe is SO MAGICAL that it can replace the almond flour we normally would use.
The other ingredient you might notice in this recipe is monk fruit. We’ve been busy baking with monk fruit because we really want to continue to find ways to decrease the amount of blood sugar-raising sweeteners (yes, we love coconut sugar and pure maple syrup, but it’s important to have options).
We love using Lakanto Monkfruit (which is really erythritol and monkfruit extract) because it has no impact on your blood sugar level. It blends well into the recipe and has no funky aftertaste. That’s a win-win!
Of course, if you can’t get or don’t want to use monkfruit, erythritol, or xylitol, you can absolutely use coconut sugar in this recipe. We have not tested this with a liquid sweetener, like pure maple syrup, so we can’t say how it will turn out or what amount to substitute. Now, let’s talk about the star of the show – CHOCOLATE! Hands down, it’s our favorite ingredient to talk about. We prefer dark chocolate and made this recipe using the Hu dark chocolate baking gems. Of course, you do you and use your preferred chocolate chips or chunks.
