Do you love guacamole as much as we do?

If you're not a fan of this creamy, dreamy, green dip, maybe you haven't had really, really good guac before.

Never fear, we're here to convince you that this is the guac you've been waiting for.

Let's talk about the star of the show - the avocado🥑!

This fruit (yes, it's a fruit) is definitely having its moment in the sun. And why not? It's a total nutrition rock star! 

 

Loaded with anti-inflammatory monounsaturated fatty acids, fiber, and numerous vitamins and minerals (folate, magnesium, potassium, and vitamins C, E, and K), avocados are linked with improving digestion, reduced depression risk, heart health, and improved vision. Sounds pretty impressive to us! 

What to serve it with

This guac makes a weekly appearance for Taco Tuesday, where we load it up into  lettuce-wrapped tacos or Siete tortilla tacos (grain-free hard shell or soft tortillas).

if being served as a dip, we use chips (we prefer Siete lime chips), carrots, celery, cucumber, red bell pepper, or jicama.

Here’s a secret: sometimes we eat the dip straight off a spoon! 🤫 No regrets either, as this recipe is nutritious as well as tasty. We also love this dip because it can be eaten throughout the week. That’s what we call a win.

This Guacamole Rocks!

Who doesn't love guac? How about guac with extra protein? Dig in!

Ingredients

Guacamole
  • 2 large avocados, pitted
  • juice of 1 lime
  • 1 shallot, minced
  • 1/4 tsp. pink Himalayan sea salt
  • 1/8 tsp. crush red pepper flakes
  • 1 garlic clove, smashed and minced
  • Garnish: chopped fresh cilantro

Instructions

  1. Remove the avocado flesh from the skin and place in a mixing bowl. Use a fork to mash the avocado as much as possible.
  2. Stir in the lime juice, shallot, salt, red pepper flakes, and garlic. Taste and adjust seasonings - salt, red pepper flakes, lime juice.
  3. Scoop into a serving bowl and top with chopped cilantro.

Notes

  • Serve with baked tortilla chips (we LOVE Siete chips) and vegetables
  • Use in your favorite taco recipe - lettuce-wrapped or Siete tortillas
  • Try adding in some diced mango for a sweet/savory flavor
