Socca Roasted Veggie Pizza {Gluten-free, Grain-free}

Pizza is a tried and true favorite for men and women and kids of all ages.
Unfortunately, any possible health benefits are usually undone by the fatty, salty toppings (pepperoni, sausage, meatballs, extra cheese) commonly found on pizza. So make your own, control the quantity and quality of ingredients, and reap the health (and taste) benefits.
This means using the right crust and the right toppings (veggies, your favorite cheese, tomato sauce) to make pizza be part of a balanced diet – one that helps to protect your heart, reduce your risk of cancer and diabetes, and whittle your waist.
This is where our pizza recipe comes in.
Instead of a traditional wheat crust, we would like to introduce you to socca. What is socca? It’s a quick bread made from chickpea (garbanzo bean) flour. Chickpea flour has gained popularity as a delicious gluten-free substitute and can be found online as well as at your local supermarket. Making socca couldn’t be easier, as it consists of just four ingredients (one of which is our favorite extra virgin olive oil by California Olive Ranch)!
Once you try socca, you’ll want to keep experimenting with all different types of thicknesses and toppings. You can make them thick like pancakes or thin like flatbread.
For this recipe, we use socca in order to resemble a traditional pizza crust. We gave you a base recipe to try.
We decided to douse our pizza in marinara sauce (a favorite is Rao's) and top it with Pecorino Romano cheese for a nice tang – a classic. However, we elevated it by adding chopped basil for fresh, herb notes, a balsamic glaze drizzle for a sweet-sour touch, and roasted veggies for a caramelized, savory flavor.
