Easy-to-Make Fluffy Cheesy Scrambled Eggs

Mom always said, “Breakfast is the most important meal of the day!” Well, in our case, it was our grandmother, who liked to refer to herself as the “original nutritionist.”

Guess what? She was right! Starting your day with a nutritious and delicious breakfast is one of the smartest things you can do for your mind, body, and spirit.

Benefits of Eating Breakfast

There’s plenty of research showing that breakfast eaters perform better in school and at work. Food provides fuel for the brain so you can learn new things and accomplish more tasks.

Breakfast eaters also are more successful with weight loss and weight maintenance. Think about the word breakfast –it means that you are “breaking the fast.” From your last meal the previous night to the morning when you awaken, you’ve likely been fasting for at least 10-12 hours. That means you start your day with a pretty low metabolism. By eating breakfast, you give a boost to your metabolism. Eating breakfast also helps to prevent overeating later in the day, which is pretty common in breakfast skippers.

Your ideal breakfast should be a high-protein, high-fiber combo. Think eggs, veggies, and avocado, or chia pudding topped with nuts, coconut, and berries. This type of breakfast will not only taste delicious, but it will satisfy you and fill you up until lunch.

Why You Should Have Eggs for Breakfast

We love eating eggs for breakfast, as there are so many ways to prepare them – scrambled, poached, sunny-side up, hard-boiled, and omelet-style. You can use the whole egg – don’t worry about the cholesterol, as dietary cholesterol is not the culprit in raising blood cholesterol, rather its seed oils and trans fats.

But, before you make your eggs, you have to start with the highest-quality eggs: pasture-raised. We are particularly fond of Vital Farms eggs.

Why pasture-raised? Remember this mantra – you eat what the animal eats.  Pasture-raised eggs come from pasture-raised chickens. These chickens roam freely eating their natural diet of bugs, weeds, and grass. Contrast that to conventionally-raised chickens who are fed a diet of GMO corn and soy and are often given antibiotics because they live in such close quarters that it’s easy to spread unhealthy bacteria throughout the flock.

There are a few companies that now produce pasture-raised eggs that are available at your local grocery store, Target, and farmer’s markets. The true test is the color of the yolk. Vital Farms eggs are bright orange, which reflects the high-carotenoid content due to what the chickens eat. Pretty cool!

One of the easiest ways to make eggs is the basic scrambled egg. We’re sharing our no-fail technique with you. The whole process should take you no more than 5 minutes!

Helpful Tips for Making Eggs


  • Add some water or milk (your choice) to make them a little fluffier.
  • Add a little cheese (we like Parmesan or Pecorino Romano) for that umami.
  • Don’t forget to season your eggs with salt and pepper and a squeeze of lemon juice – it really makes the flavor pop!
  • Choose your cooking fat wisely – we prefer California Olive Ranch Extra Virgin Olive Oil or Fourth & Heart Ghee.
  • Start the pan on medium-high. As soon as you add the eggs, turn the heat DOWN to medium-low. You want to gently cook the eggs, not turn them into rubber!

Once you make the eggs, feel free to eat it as is (this breakfast is perfect on its own), but if you want to add a fancy kick to it, serve it with a slice of our Paleo Olive Oil Bread, some sliced avocado, and a generous sprinkle of Trader Joe’s Everything but the Bagel Seasoning.
